They originated in Central Asia and have been cultivated for thousands of years. Carrots have a firm, crunchy texture when raw and become soft when cooked. They grow best in cool climates and are usually harvested in the spring or fall. The edible portion is the taproot, which develops as the plant matures in the soil.
